Last week, I had the time of my life in a cabin on a lake about 60 miles north of where I live. There is nothing like a five-day vacation in the middle of nowhere with no Internet connection and very, very limited cell service. We hiked, we biked…but also we drank our weights in rum punch and ate a lot of delicious (non-Paleo) food.
Oh yeah. And we got engaged.
Spoiler: the pink comes from beets. Luckily, I LOVE beets. And apples. And strawberries. And avocados. Celery, not so much, but you can’t taste much of it over the lemon flavor. Practically everything in this smoothie is designed to make you feel amazing.

- 1 cup water
- 1/2 medium avocado, pitted
- 2 celery stalks, roughly chopped
- 1 cup frozen strawberries
- 1 small beet, diced, steamed if you have a less-powerful blender
- 1 lemon, juiced
- 1 tablespoon coconut oil
- 1 apple, cored and roughly chopped
Add all ingredients into a high-speed blender and blend on high until smooth. Makes 2 two-cup smoothies.
