Sometimes, I’ll eat something and feel like my entire body just rises up and says, “YES, YES, THIS IS WHAT WE NEEDED. MORE OF THIS, PLEASE.” It happens for me with Oh She Glows’ Pad Thai, even with a steak sometimes if I have been feeling particularly anemic.

It never happens with milkshakes, sadly, because I think it’s a special feeling you get only when what your body needs and what you can give it are exactly aligned. My body, as much as I want it to, never needs ice cream.

I had that feeling when I drank this smoothie, adapted from this one at Food52, a few days ago.


Even as I dumped the strawberries, beets, ginger and coconut milk into the blender, I knew that my entire body was going to thank me for drinking that smoothie. And it did — I practically felt like I was glowing afterward, with all of the awesome antioxidants and digestive soothing properties of ginger. I’m sad I used up all of my strawberries, or I’d make it again tomorrow.

Well, that and the fact that I broke the blender, so if anyone has recommendations for a new one, I am all ears.

For the liquid, I used the liquid you find at the bottom of a can of coconut milk — not the cream on top, but the clear-ish milky liquid below. You can use whatever you like, including coconut water, water, or apple juice (though that will make this drink sweeter, and I’m not sure it needs it).

Ginger Beet Smoothie
Serves 1
  1. 1 cup liquid from canned coconut milk (or coconut water or apple juice)
  2. 1 Tbsp freshly grated ginger
  3. 1 cup strawberries, frozen
  4. 1 1/3 cup roasted beets, cubed (you can use fresh beets if you have a high-speed blender)
  1. Place all ingredients in the pitcher of your blender. Blend on high until perfectly smooth. Enjoy.

    • I did not! I had roasted them, but somehow when I locked the pitcher onto the base, the gears locked up and everything just STUCK. I could not unscrew the pitcher base from the blender machine base itself! Nuts.

      This would be a great way to try beets — if you’re nervous, scale back on the beets and add more strawberries, or use apple juice for more sweetness. Golden beets are also more mild and would work in this recipe for sure. Let me know if you try it!
