In CrossFit, there’s a term known as “AMRAP,” which stands for “As Many Rounds As Possible.” The idea is that you repeat a circuit as many times as possible within a given time frame — for example, five deadlifts, 20 squats, 10 pushups and maybe some mountain climbers, as many times as you can for 15 minutes.

When I can’t stomach the meat in Paleo and feel like I need to eat a little lighter, I like to say I’m doing “AMVAP,” which stands for “As Many Vegetables As Possible.”

The reason most diets work is because they increase the amount of fruits and vegetables the person is eating and cut down on processed foods. Continue reading

Grasshopper Bars (paleo, vegan, gluten-free)

Happy Monday! Did you miss me? I missed you, but you would not have wanted to see what I was eating and cooking last week. After a week and a weekend full of helping pull together our school’s largest fundraising event of the year, I was wiped out — too tired to make anything apart from omelets, really, and the occasional slice of toast.

But this week is different. It seems like spring may have come to Idaho while I was otherwise occupied, and we’re suddenly on the cusp of Earth Day. Those two things have inspired me to jump on the “Green Week” bandwagon — hence this recipe, and the other green ones to follow.

Every Easter, my mom would make Grasshopper Pie, this amazing concoction made of melted mini marshmallows, creme de menthe, and creme de cacao poured into an Oreo cookie crust and chilled until solid. It was, hands down, my favorite part of the holiday, and I even wrote about a slightly fancied-up version in my food column.  Continue reading

Detox Smoothie

Last week, I had the time of my life in a cabin on a lake about 60 miles north of where I live. There is nothing like a five-day vacation in the middle of nowhere with no Internet connection and very, very limited cell service. We hiked, we biked…but also we drank our weights in rum punch and ate a lot of delicious (non-Paleo) food.

Oh yeah. And we got engaged.

So when I got home, I was exhilarated emotionally, but also sluggish, bloated, and ready to put something really, really, healthy in my body. Enter Oh She Glows and the Pink Power Detox Smoothie. Continue reading

Mango-Avocado Salsa

I never thought I liked mangos. Turns out, I’d never had a ripe one.

When I found three of them hiding out in my Bountiful Baskets co-op basket a few weeks ago, I was disappointed, wondering what I was going to do with this fruit that was hard to slice, hard to peel and tasted kind of like old perfume. So I threw the fruit into a bowl on the counter and forgot about them until a few days later, when I squeezed them gently and realized I probably should do something with them.  Continue reading
